We all know how I scour the internet looking for recipes that I can make my own, and this one was a huge success in my home.  I found it on Delish, I saw it and lost my mind.  EVERYONE LOVES IT.  It smells amazing!

Ingredients

  • 3/4 c. ketchup
  • 1/2 c. low-sodium soy sauce or liquid amigos (my change, its better for you)
  • 1/2 c. brown sugar
  • 2 cloves garlic, minced (we all know how I feel about garlic)
  • 1 tbsp. freshly grated ginger
  • 1 lb. boneless, skinless chicken breasts
  • 1 pineapple, sliced into rings and halved
  • 1 tsp. canola oil (i used extra virgin olive oil)
  • Scallions, for garnish ( i used fresh basil and parsley - its what i had)

Instructions

  1. Make Marinade: In a large bowl, combine pineapple juice, ketchup, soy sauce, brown sugar, garlic, and ginger and whisk until combined.
  2. Add chicken to a large Ziploc bag or baking dish and pour over marinade. Let marinate in the refrigerator at least 3 hours and up to overnight.
  3. When ready to grill, heat grill to high. Oil grates and add chicken. Baste with marinade and grill until charred, 8 minutes per side.
  4. ***if you are not grilling this, you can sear it in a pan, and once you have done both sides for a min, and bake in the oven. No grill marks but my family still enjoyed it! #Hello! Sometimes we don't feel like grilling, #InJesusName)***
  5. Toss pineapple with oil and grill until charred, 2 minutes.
  6. Serve chicken with pineapple garnish with scallions.
