Thanksgiving 2016 Style – Succulent Chicken, No Turkey

Even as a vegan I have never imagined preparing Thanksgiving Dinner for my meat-eating family with no turkey! Like seriously, my family is from the ole' school. They could care less that I chose the vegan lifestyle. Literally, they could care less. 

So this year I was looking for a way to show everyone you could have an inexpensive dinner, and not have to buy a turkey. I know it sounds insane, but I wanted to try something different and see if anyone would miss turkey!

When I planned my random Cooking With Que #PopUp, I went to my local grocery store, and found some Amish chicken thighs, which are all natural, grass fed, no antibiotics, no steroids!  Seriously people if you are going to eat meat, eat the best (no rant, I’m done).  I just needed to get a lot of meat for a low cost.  Chicken thighs won.  I wondered if my family and friends would judge me, but on the same note, I really didnt care.  I believed that once they tasted that chicken, I was gonna change lives about chicken thighs. LOL!

The menu was awesome, Vegan Mac N Cheez, because It’s my favorite, and no one will believe that its Vegan! Vegan Dressing/Stuffing, depending on who you are and where you were raised that’s what you call it (lol). Garlicky Green Beans, and Cilantro Lemon Rice as my other two sides. Everything at the table was vegan with the exception of the chicken! I wanted everyone to be satisfied.

Either way, I'm clearly ranting, but I'm going to share this recipe.  People are still talking abou the chicken.  Try this recipe and let me know how yours turned out!
