Cucumbers, Tomatoes & Mint Salad

Ingredients
- 3 medium cucumbers
- 4 pints of Cherry Tomatoes Halved
- 1/4 cup Lemon Juice (fresh is always better)
- 6 Tbsp of Olive Oil
- 2 Tbsp of Chopped Mint (make sure you give them a high five to wake them up)
- 1/2 tsp of your favorite pepper blend
Instructions
- In an extra large bowl combine all of the ingredients
- Toss to make sure everything in marinated
- Cover the bowl and let it marinate at room temp for 30 mins, or chill in the fridge for up to 4 hrs
- Stir again before serving
