The easiest way to welcome fall to me is fresh apples from the apple orchard! This recipe is going to be the the easiest way to use some of those fresh apples in the happiest breakfast meal ever! Pancakes! These are simple and delicious!

Ingredients

  • Log Cabin Natural Pancake Mix
  • 1 Apple diced or sliced thin (your choice, I used pink lady apples)
  • Agave
  • Fresh Fruit topping (blueberries and strawberries)
  • Olive Oil
  • Soy Milk/ Almond Milk
  • A pan

Instructions

  1. For the Pancake mix use their recipe , but instead of using eggs and milk- use the olive oil and dairy free milk
  2. Preheat your pan on a Med fire and drizzle a little olive oil (use spray if you’d like)
  3. Pour a pancake the size you would like, top it with your apples, so that the apples cook with the pancakes.
  4. Once you see your pancake bubbles (that’s what I call them) flip that baby over and it will seal the apples in!
  5. Once they are done plate it, top with your fresh fruit of choice and drizzle agave over the top! Agave has less calories and sugar instead of regular syrup and you won’t need that much!
