An amazing salad that has you to enjoy eating the rainbow! Power packed with veggies that will give you energy, and keep your insides clean. Hearty and filling, this takes away the stigma of salads being boring, because you know what.  There is nothing Boring about this baby!  Its a crowd favorite and it tastes soo good!

Ingredients

  • 50/50 Salad Blend (tub)
  • Spinach (tub)
  • 1 cup of cooked Quinoa (my cousin... Quiana - Quinoa? y'all see it)
  • 1 bag of Rainbow Peppers (slice them)
  • 1 small container of Portobello Mushrooms (pre sliced, or you can slice them, your choice)
  • 1 English Cucumber (half mooned)
  • 1 container of cherry tomatoes (halved)

Instructions

  1. In a bowl, or container of your choosing place the entire 50/50 blend in the bottom
  2. On top, place the entire tub of spinach, you can never have too many veggies, #JustSayin
  3. Next, pick corners for your mushrooms, place your mushrooms in corners
  4. Then, grab those cucumbers and put them in the spaces in between the mushrooms
  5. Use the sliced rainbow peppers and build a fort around the center of your salad, because you are going to put the quinoa in the center
  6. Add the quinoa in the center, like a little pyramid, yes folks we are doing arts and crafts for this salad... just enjoy it :)
  7. Lastly, place your halfed tomatoes in all the left over spaces :)
  8. Plate it and top it with your favorite dressing :) Best Salad Ever!!!!
